That's a tough one.
My vote is for Eifert.
God. Country. Notre Dame.
For all the people saying that were good at the tight end position look at our depth.
#18 so. off season should help his dismal blocking, and 1 catch 5 yards for 2011.
#82 jr. constantly injured maybe kicks the injury bug.
#88 sr. football career possibly over if rumors are true.
So how are we safe to such a vital position especially if a stud doesn't drop in our laps this recruiting cycle? Plus like the experts always say "TE is a young QB best friend" we need depth there.

Give me Eifert. I think the D would still be ok. We need play makers on offense next year.

That is a no brainer. Te'o without a doubt. We desperately need his speed and leadership on defense. We can replace Eifert with Koyack. I think Koyack will be better than Rudolph and Eifert.

Te'o all day long. Bigger void in the middle of that D w/o him. Hopefully with Hendrix or Golson, we will using a lot of 4 wide if Eifert is gone. Plus, the young TEs are talented and will progress.
Manti all day, every day. If Eifert leaves early, and Golic as being reported is having his career cut short by injury, I wonder if the staff would consider Ragone for another year if he was cleared by the NCAA. Ragone is a heck of a blocker and is a fairly reliable pass catcher, and has all but said in interviews he would love another crack at it assuming he could make a full recovery and be granted a medical 6th year.
I'd rather have another year of Ragone and the scholly freed up next year than take a lower tier guy this year just to fill the spot and end up committed to that for 4 more years. Also taking into consideration that our TE blocking left a bit to be desired this year even with Eifert.
